Vegan Thai Red Chickpea Burger

Using any one of our authentic Thai curry kits to beautifully spice these chickpea burgers!


  • Thai Taste Thai Red Curry Kit
  • 4 Burger Buns
  • Rocket Salad Leaves
  • 1 Large Tomato, Sliced
  • 1 Avocado, Sliced
  • 1/2 Cucumber sliced
  • Chickpea Burger:

  • 1 Medium Onion
  • 3 garlic Cloves
  • 1 tsp Vegetable oil
  • 1 can Chickpeas, drained.
  • 1 small bunch fresh Coriander
  • 3 tbsp All-purpose flour & more for rolling.
  • Coconut, Chilli & Lime Leaf Dressing:

  • Zest of 2 Limes & Juice of 3 Limes
  • 2 tbsp Thai Taste Vegan Fish Sauce
  • 2 finely grated Shallots
  • 3 tbsp Vegetable Oil

Steps for cooking

    Make the dressing:

  • 1.In a bowl add the coconut milk from the red curry kit, with the lime zest and juice, vegan fish sauce, grated shallots and oil.
  • 2. Whisk the mixture to combine all the ingredients.
  • 3. In an air-tight glass jar add the dried Lime leaves and chillies from the kit. Add in the coconut dressing and seal. Let the flavours infuse overnight before serving.
  • Make the chickpea burger patty:

  • 1. In a food processor add the Chickpea burger ingredients and the curry paste sachet from the Thai Taste Thai Red Curry Kit.
  • 2. Blend until roughly chopped, we do not want a fine paste,but we do want it bonded together. Scoop the chickpea mixture onto a floured surface.
  • 3. Form the mixture into 4 balls. If the mixture is too wet & sticky, work some more flour into the dough.
  • 4. Flatten each ball into a disc, or burger patty shape, and wrap with cling film and freeze these to firm up for 30mins.
  • Making the Thai Red Chickpea Burger:

  • 1. Add oil to a large frying pan that will hold all 4 burgers at once.
  • 2. When the oil is hot, add the burgers and fry on each side, turning regularly until brown and crispy. About 5 minutes on each side.
  • 3. Slice your burger buns and smear on some of the coconut dressing, rocket leaves, avocado, tomato,and cucumbers.
  • 4. Add more dressing and place the cooked burger on top of the dressed salad.
  • 5. Add the top of the bun and serve hot!

Chef’s Tips

This recipe works great with any of our delicious curry kits! This recipe also makes a lot of coconut dressing, which can be stored and used over the course of a couple of days, if kept refrigerated.
