The perfect combination of Sweet, Salty, Sour & Spicy Flavours, Thai cuisine in one delicious mouthful!


  • 30g Chopped Peanuts
  • 50g Desiccated Coconut
  • 200g Thai Taste Palm Sugar
  • 50ml Thai Taste Vegan Fish Sauce
  • 50g Thai Taste Tamarind Paste
  • Pomegranate Seeds
  • 1/2 Lime - diced including the skin.
  • 2 Red Bird's Eye Chillies
  • 20g Thai Taste Minced Galangal
  • 10g Coriander Leaves,chopped
  • 20g Thai Shallots,peeled and slices
  • 2 heads of Bady Gem Lettuce - separated into leaves

Steps for cooking

  • 1.On high heat, toast the peanuts and desiccated coconut in a shallow frying pan. Shake pan to ensure even toasting.
  • 2. Add the palm sugar & fish sauce and simmer until the sugar has melted and the sauce begins to bubble. Remove from the heat.
  • 3. Add the tamarind paste and mix. The sauces should be sticky and thicken as it cools.
  • 4. Add the remaining fresh ingredients and mix well.
  • 5. Serve a generous tablespoon on each lettuce leaf.
