This recipe is great for a mid-week meal when you are looking for an amazing fake-away!

Ingredients

  • 100g Red Peppers, cut into 2.5cm pieces
  • 1 tbsp Oil
  • 300g Prawns - Raw & Peeled
  • 200ml Thai Taste Thai Chilli Jam
  • 1 Carrot - thinly sliced
  • 400g Rice - pre-cooked
  • 5 Spring Onions
  • Lemon wedges and coriander to serve

Steps for cooking

  • 1.Heat the oil in a wok or large deep frying pan and cook the prawns for 3-4 minutes until browned. Stir in the carrot and red peppers, and stir-fry for 1 minute.
  • 2. Reduce the heat and stir in the Thai Chilli Jam sauce,stirring to coat the prawns in the paste.
  • 3. Stir in the rice,spring onions cook for 2-3 minutes until the rice is heated through. Remove from the heat and cover the pan to keep warm.
  • 4. Scatter over some slices of lemon and coriander and serve immediately.
