Inspired by the floating markets of Bangkok, these little lettuce cups are full of flavour and a great recipe for getting vegetables into your child’s diet or an easy summer appetiser!

Ingredients

  • 2 Little Gem Lettuce
  • Carrots - Shredded
  • Bamboo Shoots - Shredded
  • 200g-300g Cooked Chicken Breasts
  • 2 Spring Onions
  • 200g Thai Taste Satay Sauce
  • 100ml Thai Taste Sweet Chilli Sauce

Steps for cooking

  • 1.Mix together the satay sauce and sweet chilli sauce and pour into a serving dish.
  • 2. Wash the little gem lettuce and separate the leaves on a platter. Use a paper towel to absorb any water excess.
  • 3. Slice your cooked chicken into bite-sized pieces. Divide the chicken, shredded carrots and bamboo shoots across the lettuce leaves.
  • 4. Garnish with sliced spring onions and serve with the satay dipping sauce.
