Thai Basil adds a delightful earthy peppery note to this classic Christmas side dish.  Perfectly complementing the sweet and sour cranberries!

Ingredients

  • 250ml Water
  • 250g Sugar
  • 350g Fresh Cranberries
  • 30g drained Thai Taste Thai Basil Leaves
  • Pinch of Salt
  • 60ml Orange Juice
  • Slice of Orange peel

Steps for cooking

  • 1.In a pan bring the water and sugar to a boil until the sugar has dissolved.
  • 2. Add the cranberries and return to the boil,until the berries start to pop! (This can take about 8 minutes)
  • 3. Reduce the heat and add the Orange juice and zest, lower the heat and simmer for another 10 minutes. the cranberries will have cooked down.
  • 4. Stir in the Thai Basil and let the sauce cool to room temperature and either serve or store in your freezer until needed!
