Sriracha Pickled Slaw

This salad makes a great side dish or a delicious light alfresco meal. it is packed with big flavours and many fresh herbs.  This recipe was created with our friends at Mrs Elswood.


  • Slaw ingredients:

  • 10 Pickled Cucumbers - Mrs Elswood Whole Sweet Pickled Cucumbers.
  • 1 Half Red Cabbage.
  • 4 Birds eye Chillies (deseeded)
  • 2 Red Onions.
  • Dressing Ingredients:

  • 4tbsp Thai Taste Sriracha Hot Chilli Sauce.
  • 4 tbsp Red Wine Vinegar.
  • 4 lemons Juiced.
  • 4 tbsp Sesame Oil.
  • 4 tbsp Peanut Oil.
  • 2 tbsp Thai Taste Palm Sugar.
  • 2 tbsp Salt.
  • Herb Ingredients:

  • Half Bunch Fresh Mint - Chopped.
  • Half Bunch Fresh Coriander - picked.
  • 2 tbsp toasted Black Onion Seeds (Nigella)
  • Garnish Ingredients:

  • 1 small handful of picked fresh Mint and Coriander.
  • 1 small handfull chopped toasted Peanuts.

Steps for cooking

  • 1.Thinly slice all the slaw ingredients and place them in a large bowl.
  • 2. In another bowl combine and whisk all your dressing ingredients. Add the dressing to the Slaw.
  • 3. Allow the flavours to develop for 30mins.
  • 4. When you are ready to serve, add the fresh herb ingredients - Mint, Coriander and Toasted black onion seeds and mix.
  • 5. Top with the garnish ingredients.

Chef’s Tips

You can prepare the slaw in advance and just add the garnish just before you need to serve! This recipe is really easy to tailor to your favourite flavours, try adding some Thai Taste Turmeric or Thai Basil Leaves!
