Spicy Thai Drunken Noodles

This is a classic Bangkok stir fry with many stories of how it came about. The most used story is that a man, after a long night, created this dish full of spice and nourishing greens to deal with his hangover!

  • 1 tbsp Thai Chilli Paste
  • 400g Fresh Rice Noodles or 200g Pre-cooked Thai Taste Folded Rice Noodles
  • 300g Chicken breast, sliced
  • 100g Pak Choi or Tenderstem Broccoli
  • 4 tbsp Thai Taste Oyster Sauce
  • 1tbsp Thai Taste Fish Sauce
  • 1 tsp Soy Sauce
  • 1 tsp Thai Taste Palm Sugar
  • 30g Thai Holy Basil or Thai Spicy Basil.

Steps for cooking

  • 1.Heat some vegetable oil in a wok over a high heat. Add the Thai chilli paste and stir fry to release its aromas (around 30 seconds).
  • 2. Add the chicken and stir-fry until almost cooked. Add in the vegetables.
  • 3. Add the noodles, oyster sauce, soy sauce, and palm sugar. Stir until it is all combined. Just before serving add the Thai holy basil.

Thai Holy basil can be hard to find fresh, you can swap in Italian basil and still get a great tasting dish!
