The ultimate cohesion of salty, sweet, spicy, and savoury flavours! Som Tam salad is traditionally made from green papaya and snake beans. This recipe takes the iconic flavours of a Som Tam Salad for you to use on any of your favourite salads or for a tantalising marinade.  This recipe was created by Thai street-food chef, Sebby Holmes of Farang, London.


  • 4x Garlic Cloves.
  • 5x birds eye chillies.
  • Course Sea Salt.
  • 1 tbsp Thai Taste Palm Sugar.
  • 2 x Limes.
  • 2 x Mandarins.
  • 3 tbsp Thai Taste Fish Sauce or Thai Taste Vegan 'Fish' Sauce
  • 1 tbsp Thai Taste Tamarind Paste.
  • Coriander Root (optional).

Steps for cooking

  • 1.Using a pestle and mortar,bruise the garlic cloves one at a time garlic clove at a time. If you also have coriander root you can add it here.
  • 2. Add in all birds eye chillies. & some coarse sea salt to act as an abrasive.
  • 3. Next add some palm sugar. and the juice of two limes,mandarins.
  • 4. Add fish sauce and tamarind paste.
  • 5. Keep mixing in the pestle and mortar until it is all combined.

Chef’s Tips

If the dressing is too sweet, add more chillies and if too spicy add more palm sugar!
