This classic Thai dish is a fun twist on a classic stir fry! This recipe was created by Thai street-food chef, Sebby Holmes of Farang, London.

Ingredients

  • 200g Thai Taste Vermicelli Noodles.
  • Bowl of Ice water.
  • 1 tbsp Oil.
  • 500g Chicken Breast cubed.
  • 100g cashew nuts.
  • 40g Dried Shrimps.
  • 1 tbsp Thai Taste Turmeric.
  • 1 tbsp Thai Taste Galangal.
  • 1 tbsp Thai Taste Thai Basil.
  • 1 Tbsp Thai Taste Garlic.
  • 6 Dried red long chillies soaked in water.
  • 1tbsp Thai Taste Fish Sauce.
  • 1 tbsp Thai Taste Oyster sauce.
  • 100ml Vegetable Stock.
  • 1tsp Thai Taste Palm Sugar.
  • 2 Fresh Kaffir Lime Leaves.
  • 1 pinch Chilli flakes or Powder.
  • Serve with fresh Thai Basil and A squeeze of Lime.

Steps for cooking

    How to Cook Vermicelli Rice Noodles:

  • 1. Place the noodles in a bowl of warm water until soft.
  • 2. Place softened noodles into a pot of boiling water for about 1-2 minutes until cooked.
  • 3. Drain off as much water as possible and place into a bowl of ice water and add 1 tbsp oil.
  • 4. Drain when cool, these noodles are now ready for anything whether you are making a stir fry or straight into a summer noodle salad!
  • Chicken and Cashew Nut stir fry:

  • 1.Heat up a wok to high heat and add the oil (it should be at the smoking point)
  • 2. Add the cubed chicken breast and cook. When it is cooked on the outside, add the cashew nuts and dried shrimp.
  • 3. Once it is cooked throughout,add the Turmeric,Galangal,Garlic and Red Chillies. Then add Fish sauce to deglaze the edges.
  • 4. Add the Oyster sauce and Vegetable Stock and tsp of Palm Sugar and the Thai Basil.
  • 5. Rip and add Fresh Kaffir Lime Leaves. Turn off the heat and add the fresh coriander,and Chilli Flakes.
  • 6. Grab your pre-cooked Vermicelli Noodles and add to your wok with the chicken and cashew stir fry.
  • 7. Serve with Fresh Kaffir Limes,Thai Basil and A squeeze of Lime.
