Satay Brown Rice Noodle Salad

This delicious cold noodle salad is great for a summer lunch.


  • 200g Thai Taste Satay Sauce
  • 2 tbsp Soy sauce
  • 3 tbsp Lime juice
  • 1 tbsp Thai Taste Palm Sugar
  • 1 thumb finely grated ginger
  • 1 crushed clove garlic
  • Small handful of fresh coriander - chopped
  • 200g Thai Taste Folded Brown Rice Noodles
  • 1 carrot - grated
  • 1 red pepper - chopped
  • 1/4 Red cabbage - chopped
  • 300g - 400g cooked chicken - chopped.
  • Coriander & sesame seeds for garnish

Steps for cooking

  • 1.Using the instructions on the packet, cook the brown noodles. Drain and rinse with cold water to stop them from sticking together. In a large mixing bowl combine the satay sauce, soy sauce, lime juice, palm sugar, ginger, garlic and coriander.
  • 2. Add the cooked noodles to the dressing and combine to ensure all the noodles are coated.
  • 3. Add the chopped vegetables and chicken and stir through.
  • 4.Serve with some fresh coriander and sesame seeds for garnish.
