Satay Brown Rice Noodle Salad
This delicious cold noodle salad is great for a summer lunch.
Ingredients
200g Thai Taste Satay Sauce
2 tbsp Soy Sauce
3 tbsp Lime Juice
1 tbsp Thai Taste Palm Sugar
1 thumb Fresh Ginger - grated
1 Garlic Clove - crushed
Fresh Coriander - chopped
200g Thai Taste Folded Brown Rice Noodles
1 Carrot - grated
1 Red Pepper - chopped
1/4 Red Cabbage - chopped
300g - 400g Cooked Chicken - chopped.
Coriander & Sesame Seeds for garnish
Preparation
Step 1
Using the instructions on the packet, cook the brown noodles. Drain and rinse with cold water to stop them from sticking together. In a large mixing bowl combine the satay sauce, soy sauce, lime juice, palm sugar, ginger, garlic and coriander.
Step 2
Add the cooked noodles to the dressing and combine to ensure all the noodles are coated.
Step 3
Add the chopped vegetables and chicken and stir through. Serve with some fresh coriander and sesame seeds for garnish.
Chef's Tip
This recipe is great for packing in fresh vegetables so why not try peppers, broccoli, tomatoes and more! Also, spice this up with fresh chillies and herbs.
