Coconut Jasmine Rice
So easy to make and so delicious with only four ingredients. This coconut rice is perfect for cooling off Thailand's many spicy curries!
Ingredients
200g Thai Taste Thai Sticky Rice
200ml Thai Taste Coconut Milk
1 tsp Thai Taste Vegan Fish Sauce or 1 tsp Salt
1 tsp Thai Taste Palm Sugar - or to taste
Sliced lime wheels for garnishing.
Preparation
Step 1
In a medium-sized pan, rinse the Thai sticky rice, until the water runs clear. Drain off the excess water and add the coconut milk, palm sugar, fish sauce and around 200ml of water.
Step 2
Put the pan on a high heat and once it starts to boil, turn the heat down to low, cover with a lid and leave for 20 minutes. Uncover and continue to cook for a further 5 minutes.
Step 3
Fluff and serve with a few slices of fresh lime.
Chef's Tip
Rice is really easy to infuse with flavour, try adding some lime leaves or lemongrass to the pot as it simmers!
