Ingredients

Sesame Dressing:


  • 2 tbsp Soy Sauce

  • 2 tbsp Sesame Oil

  • 1 tbsp White Vinegar

  • 1 tbsp Vegetable Oil

  • 1 tsp Thai Taste Palm Sugar

  • 1 tbsp Thai Taste Sriracha Hot Chilli Sauce

  • 1 tsp Thai Taste Lime Leaves

  • Juice of 1 Lime

  • Sesame Seeds


Salad:


  • ½ Red Cabbage

  • 2 Spring Onions

  • 2 Red Peppers

  • 200g Cherry Tomatoes

  • 485g Chicken Breast Fillets - cooked and sliced

  • 50g Chopped Walnuts

Preparation

Step 1


Prepare the sesame dressing by combining all the dressing ingredients, except the sesame seeds, in a bowl and whisk to combine.



Step 2


Finely chop all the salad ingredients and place them in your serving bowls, 1 ingredient at a time.



Step 3


Sprinkle over the chopped walnuts and drizzle over the salad dressing. Just before serving garnish with the sesame seeds.

Buddha bowls are a great way of mix and matching vegetables and proteins, try with whichever combination you want!
