Barbecue Moo Ping - Grilled Pork Skewers
This classic Thai Street-food is found on the side of many bustling city centres across Thailand, served on skewers for easy on-the-go eating! It is full of flavour and is the perfect addition to your Summer dining! This recipe was created by Thai street-food chef, Sebby Holmes of Farang, London.
Ingredients
5 Garlic Cloves
1 pinch Coarse Sea Salt
1 pinch White Pepper
1 tbsp Thai Taste Palm Sugar - heaped
2 tbsp Thai Taste Oyster Sauce
2 tbsp Thai Taste Fish Sauce
1 tbsp Thai Taste Sriracha Sauce
500g Pork Belly - slices or thick cut bacon
Bamboo Sticks
Chillies and Ginger - thinly sliced for garnish
Preparation
Step 1
In a pestle and mortar crush the garlic cloves one by one, add the sea salt to use as an abrasive.
Step 2
Add the palm sugar and oyster sauce and mix. Then Add in the fish sauce and sriracha sauce and mix.
Step 3
Marinade the Pork belly with the mixture and make sure it is all coated. This can be left over night to marinate.
Step 4
Skewer the pork on bamboo sticks. If cooking in the oven place in an oiled oven proof dish or they are ready to put on a BBQ!
Step 5
Place in the oven at 200 degrees c for 20mins or over a BBQ at a high heat until cooked and sauce is sticky and caramelised.
Step 6
We served with Sliced red chillies and sliced ginger.
Chef's Tip
Use Thai Taste Sriracha sauce for an instant spicy flavour!
