Our namesake cocktail is a vibrant mix of pink lemonade, Thai Galangal and Thailand’s own Spirit – Mekhong Thai, which is made with 95% molasses & 5% rice. If you can’t find Mekhong Thai Spirit near you, try a dark rum!


  • 114g Thai Taste Minced Galangal.
  • 100g Caster Sugar
  • 100ml Water
  • Mekhong Thai Spirit or Dark Rum.
  • Ice Cubes.
  •  Pink Lemonade - we used La Mortuaciene
  •  Garnish with an Orange or Grapefruit slice.

Steps for cooking

    Preparing the Galangal Simple Syrup

  • 1. In a saucepan, heat equal parts caster sugar and water. Add the minced Galangal. Heat until the sugar has dissolved completely. Take off the heat and allow it to cool. This syrup can be stored in a sealed glass jar or bottle until you need it.
  • For the Pink Elephant Cocktail

  • 1.Fill a tall glass with crushed Ice.
  • 2. Pour in 1 measure (50ml) of spirit into each glass.
  • 3. Drizzle in some Galangal syrup, (you can add more if you would like a stronger flavour) Top up with Sparkling Pink Lemonade.
  • 4. Garnish with a slice of orange or grapefruit!
