Banana and Palm Sugar Roti

Ingredients

250 g Sieved Plain Flour

1 pinch Coarse sea salt

1 egg

Warm water

Veg oil

2 Halved long ways Bananas

TT palm Sugar

Condensed milk for serving

  1. First make the roti dough
  2. In a bowl mix plain flour, salt, egg and rub until resembles breadcrumbs
  3. Slowly start adding warm water until the mixture comes together to form a dough
  4. Knead dough
  5. Sprinkle more flour if needed
  6. Place in an oiled bowl and cover let rest.
  7. On an oiled surface, “slap” out dough onto an oiled surface
  8. Delicately pick up and place into a pan with oil (you can remove pieces off the edge)
  9. Shallow fry in oil in a flat pan
  10. You want to achieve a golden brown colour on the bottom surface of the roti
  11. Place your half bananas onto the roti
  12. Dot on some TT palm sugar
  13. Fold over roti to form a parcel
  14. Keep Shallow frying until the dough has cooked
  15. Strain on kitchen paper
  16. Serve with drizzled condensed milk and TT palm sugar.
