Seb Holmes's Thai 1 Pot Wonder


2 tsp TT Turmeric

2 tsp TT Galangal

2 tsp TT Kaffir lime leaves

2 tsp TT Thai Basil Leaves

Generous Pinch Salt

Fresh Kaffir Lime

Fresh Lemongrass

2-3 Red finger chillies

2 whole Garlic

Banana Shallots bulbs

500g Cubed Beef braising steak

200-300g Potatoes

TT green curry meal kit

1x Ginger root

Handful Coriander

Fresh galangal root

1 tbsp fish sauce

  1. Start by marinating the cubed beef (tbsp veg oil, 2tsp TT turmeric, TT galangal, TT kaffir lime, beef, green curry paste from kit) mix. Fry off on a high heat to seal the beef.
  2. Add water to cover the beef.
  3. Add coconut milk form kit
  4. Add Veg stock, Potatoes, lemongrass, fresh lemongrass, garlic, banana shallots, galangal
  5. Add fresh chillies, fish sauce
  6. Add herbs from the kit
  7. Place in the oven for 2-3 hours until the beef is fully cooked and tender. (can be kept longer until needed on a low heat)
  8. Finish of with fresh Thai basil or coriander, chopped chillies and ginger.

Add whatever fresh vegetables you have on hand to create this delicious winter warmer!
