Steps for cooking

  • 1.Combine the oyster sauce, 1 tbsp fish sauce, 1 tsp palm sugar in a small mixing bowl. Pour over the steaks and massage the marinade all over the steaks. Cover and leave to marinate whilst we make the dipping sauce.
  • 2. For the Crying Tiger Sauce, start by toasting 2 tsp of the sticky rice in a dry pan on a high heat until they are golden brown and start to smell a little like popcorn. Add these to a pestle & mortar and grind to a fine powder.
  • 3. In a bowl add the tamarind, 3 tbsp fish sauce, lime juice, chilli flakes, 2 tsp palm sugar, mix, then add the shallot and coriander. This is now ready to serve!
  • 4. Cooking the Steaks - Heat a large pan over a high heat and brush with oil. Add the steaks and cook. Making sure to turn over for even cooking. For medium-rare cook for 2-3 minutes on each side. Transfer to a chopping board and allow to rest for a further 3 minutes.
  • 5. To serve slice the steaks into easy dipping potions with rice, green beans and cabbage,
