We definitely believe in putting the lime in the coconut and drinking it up! Sweet & citrusy, this makrut lime and coconut martini is Summer in a 🍸 glass!

Ingredients

  • 100ml Vodka.
  • 200ml Thai Taste Coconut Milk.
  • 1 Fresh Lime Juiced.
  • 1 tsp Thai Taste Makrut/Kaffir Lime Leaves (chopped)
  • Ice Cubes.
  •  1 tsp Thai Taste Palm Sugar.
  • Lime Wheels.
  • Caster Sugar & Lime Zest for the Martini glass rim.

Steps for cooking

    Prepare the Glasses:

  • 1. Combine caster sugar and Lime zest on a small plate.
  • 2. rub a slice or wedge of lime along the edge of the martini glass. Upturn the glass onto the plate of sugar and lime zest to rim the glass.
  • Making the Martini:

  • 1. In a cocktail shaker, combine the vodka, coconut milk, lime juice, chopped Makrut/Kaffir lime leaves and palm sugar. Add some ice cubes, put on the lid of the cocktail shaker and SHAKE!
  • 2. Strain into your prepared Martini glass and then garnish with a lime wheel.

Chef’s Tips

You can use caster sugar instead of Palm sugar to retain the colour of the coconut milk.
